Comparison of Chemical and Antioxidant Properties of Mentha Piperita L., Salvia Officinalis L., Rosmarinus Officinalis L. and Lavandula Angustifolia L.

4 different plant species belonging to the same family mint (Mentha piperita), sage (Salvia officinalis), rosemary (Rosmarinus lavender (Lavandula angustifolia) were harvested from Afyon region. Total antioxidant and phenolic contents analyzed by DPPH Folin-Ciocalteu method. The effect of extra virgin olive oils oxidation stability was tested means rancimat According analysis results, M. piperita is highest capacity radical scavenging activity 95.31%. activities S. officinalis, R. officinalis L. angustifolia are respectively 91.83%, 54.28%, 18.85%. total content piperita, plants as gallic acid respectively; 0.32, 0.28; 0.26 0.18 mg/100ml. results study, order did not change in terms content, has values lowest. It also found that effective on oil prevent large small angustifolia.
